If you didn't already guess, this paleo dutch baby pancake recipe is in high demand around here. And honestly, I really don't mind that my boys request it every weekend. For one, it's fairly healthy in the realm of breakfast foods, and second, it is so easy to make!!

dairy-free (if you use coconut oil instead of butter)
Paleo ...ish
Paleo...ish?? Some strict Paleo followers would not include butter because they believe dairy is completely off limits. However, dairy is a fairly grey area within the rules of Paleo foods. The way I see it is that if you have a good idea of how your body reacts to foods and you are ok with dairy then use a high-quality grass-fed butter and enjoy.
If you don't do well with dairy then use a super yummy (and totally Paleo) substitute like coconut oil or coconut oil with butter flavor - yes that is a thing and it's pretty darn good!
I use sucanat in this recipe instead of refined white sugar. Sucanat is dehydrated cane sugar that has not been separated or blended, and has nothing added or taken out. It is produced when freshly cut cane sugar is cut and crushed to squeeze out the juice. That juice is heated until it is reduced to a thick syrup, then dehydrated.
Sucanat has a slight natural molasses flavor which can really enhance certain recipes (like chocolate based ones, BBQ sauces, and marinades), but it's also great for baking, on hot cereals or in beverages. Sucanat is a good source of iron and potassium.
Use a 1-to-1 replacement for refined sugar.

Yes, you have your Paleo Dutch Baby Pancake Recipe and eat it too! Sunday morning brunches are back on the menu and it's going to be SO YUMMY (and easy)! You can enjoy this delicious pancake recipe and still stick to your Paleo diet. Even if the kids don't eat Paleo they will love it!
4 Tbsp Butter*
4 eggs
1 large or 2 small apples, cored and sliced thinly
3/4 almond milk*
3/4 cup Bob's Red Mill Paleo Baking Flour
1/4 tsp baking powder
1/2 tsp sea salt
1 Tbsp sucanat
1 Tbsp sucanat
1 tsp cinnamon
Preheat oven to 400℉
Place butter (or other oil) into a 12" cast iron frying pan and place in the oven to melt.
In a bowl combine the Paleo baking flour, baking powder, sucanat, salt, almond milk, and eggs.
Once the butter is completely melted, remove the cast iron skillet from the oven. Place the sliced apples into the bottom of the pan on top of the melted butter. Pour batter over the apples slowly.
Combine sucanat and cinnamon (for the topping) and sprinkle over the top of the uncooked pancake mixture evenly.
Bake in oven for 20-25 minutes until golden brown.
*Substitutions:
Butter: Using dairy on a Paleo diet is a grey area. Decide for yourself if you do well with dairy then go ahead and use a good quality butter. If not, you could easily substitute for coconut oil or even Nutiva Organic Coconut Oil with Butter Flavor.
Almond Milk: you can use any Paleo "milk" here like coconut milk, hemp milk, etc.
