If you are eating gluten-free, grain-free, or Paleo, you need to always have almond flour on hand.
I find the least expensive way to buy almond flour is at Costco or on Vitacost.com and I keep tons of it on hand because I use it SO many recipes. You can also get it on Amazon as well.
One of our favorite recipes with almond flour is Protein-Packed Banana Nut & Raisin Breakfast Muffins.
Try to et organic, pastured eggs.
The eggs and the almond flour together actually make these pancakes fairly substantial in protein!
Since changing the way our family eats and trying to cut out most processed sugars, I find myself using bananas quite a bit in baking. Because of this, I always buy a bunch of bananas when at the grocery store.
On my counter, I usually have one bunch that is still slightly green and another bunch that has over-ripened and is ready for baking. If for some reason I can't get to my baking before the bananas are going to ripen beyond usability I just remove the peels and freeze them to use another day. This way I always have bananas on hand!
Baking powder is not considered "Paleo-friendly" because it often contains aluminum, gluten and/or cornstarch.
If you are not following a Paleo, gluten-free, or corn-free diet, then feel free to use one of the commercial baking powders, preferably one that is aluminum-free like this one.
For those following a strict Paleo diet, I bet you didn't know that you can make your own Paleo-friendly baking powder at home! Baking powder is really just a combination of baking soda (which IS Paleo-compliant) and some sort of acid (typically such as monocalcium phosphate and sodium aluminum sulfate in the store-bought options). Commonly cornstarch, potato starch, or another grain-based starch is also added to absorb moisture and to prevent the active ingredients from clumping together. However, if you are making this to use immediately then you skip the starch part.
*DIY Paleo Baking Powder
Mix 1 part baking soda to 2 parts cream of tartar in a bowl and use immediately.
To make 1 tsp baking powder, you would mix 1/3 tsp baking soda + 2/3 tsp cream of tarter. That's it!
Whether you eat Paleo, gluten-free, dairy-free, grain-free, or you are free to eat whatever you like, these super simple and easy pancakes are the best! Get a healthy, protein-rich, kid-approved brekky on the table in a matter of minutes.
1.5 cups almond flour
3 eggs
1 medium very ripe banana
1 tsp baking powder* (*for a strict Paleo option, see how to make your own)
1 tsp cinnamon powder (optional)
Mash banana with a fork in a medium-sized bowl.
Add eggs and whisk together until there are very few to no lumps.
Add almond flour, baking soda (and cinnamon if desired). Mix until smooth.
Add batter by the spoonful to make rough circles on a griddle or fry pan. Cook at medium to medium/low (approximately 300-325℉) for about 3-4 minutes on each side. Be sure to lower heat if the bottom begins to burn so that the middle can cook adequately.
You could go classic and add some real maple syrup - no heavy pours here!
Or, you could get creative and try some options that are lower in sugar:
nut butter + berries**
peanut butter + sliced banana**
sliced strawberries and whipped cream (not for those who are dairy-free)
chocolate hazelnut spread (we LOVE this one which has about half the sugar as the leading brand)
elderberry syrup** - tastes yummy and boosts your immune system for winter cold & flu season!
homemade berry compote**

We are a house divided on this one. One child LOVES chocolate chips added (note: we consider this a special treat) and one child would rather the pancakes stay as is - simple and plain but delicious nonetheless.
If you want to add some flair to your 4 Ingredient Paleo Pancakes, then obviously you won't be using 4 ingredients anymore, but your kids might think you are a goddess. Well, one can try. No promises here.
Try adding immediately upon adding batter to the griddle: chocolate chips, raisins, fresh blueberries, chopped walnuts, or anything else you fancy!
Q: Can I substitute almond flour for all-purpose flour?
A: No, they absorb liquid quite differently. I would find a different recipe.
Q: Is almond flour low carb?
A: Yes, 1/4 C almond flour has 6g carbs.
Q: Can you freeze these pancakes?
A: Most definitely! I usually make 3-4 times the recipe and freeze a few dozen for quick weekday breakfasts.
Q: Is this recipe gluten-free?
A: Yes! And it's also grain-free, dairy-free and Paleo (when you use the DIY Paleo baking powder option.)
