With cooler weather here, this is the perfect time to make a big batch of healing soup. This recipe is packed with collagen, amino acids, and anti-inflammatory ingredients that support gut health, joint health, and glowing skin.

Ingredients (Serves 6-8)

For the broth:

2-3 lbs beef or chicken bones (with marrow)

2 tablespoons apple cider vinegar

1 onion, quartered

3 carrots, roughly chopped

3 celery stalks, roughly chopped

4 cloves garlic, smashed

2 bay leaves

1 tablespoon sea salt

1 teaspoon black peppercorns

10-12 cups filtered water

For the soup:

2 tablespoons coconut oil or ghee

1 onion, diced

3 carrots, diced

3 celery stalks, diced

3 cloves garlic, minced

2 cups leafy greens (spinach, kale, or chard)

2 cups cooked chicken or beef, shredded

Fresh herbs (parsley, thyme, or dill)

Sea salt and pepper to taste

Instructions

Make the Bone Broth (Can do in advance):

  1. Place bones in a large pot or slow cooker. Add apple cider vinegar and let sit 30 minutes (this helps extract minerals).

  2. Add vegetables, bay leaves, salt, peppercorns, and water. Bring to a boil.

  3. Reduce heat to low and simmer: 12-24 hours for chicken bones, 24-48 hours for beef bones.

  4. Strain broth through a fine-mesh strainer. Let cool, then refrigerate. Skim off fat layer if desired.

Make the Soup:

  1. Heat coconut oil in a large pot over medium heat.

  2. Add diced onion, carrots, and celery. Sauté 5-7 minutes until softened.

  3. Add garlic and cook 1 minute until fragrant.

  4. Pour in 8 cups of your homemade bone broth. Bring to a simmer.

  5. Add shredded meat and leafy greens. Simmer 10 minutes.

  6. Season with salt, pepper, and fresh herbs.

Storage: Keeps in fridge for 5 days, freezer for 3 months.
