Instructions
Make the Bone Broth (Can do in advance):
Place bones in a large pot or slow cooker. Add apple cider vinegar and let sit 30 minutes (this helps extract minerals).
Add vegetables, bay leaves, salt, peppercorns, and water. Bring to a boil.
Reduce heat to low and simmer: 12-24 hours for chicken bones, 24-48 hours for beef bones.
Strain broth through a fine-mesh strainer. Let cool, then refrigerate. Skim off fat layer if desired.
Make the Soup:
Heat coconut oil in a large pot over medium heat.
Add diced onion, carrots, and celery. Sauté 5-7 minutes until softened.

Pour in 8 cups of your homemade bone broth. Bring to a simmer.
Add shredded meat and leafy greens. Simmer 10 minutes.
Season with salt, pepper, and fresh herbs.
